The Scale is a Joker

Hi all,

Happy Independence day!

So, today is the day for starting the 4th of July challenge because it is July 4th. My body decided to retain some water and make the scale try to be funny. So, I do not update myfitnesspal with gains unless they stay for over a week. I wouldn’t update Healthy Wage either, but they want a verified weigh in therefore it will have me taking a tiny step back on the other two challenges with my 1 pound scale lie today.

Anywho, I am ok with it, it’s just ironic of course.

Oh, so a few updates. I don’t recall if I mentioned we finished the main nursery fence yesterday. Pretty sure I did but here see the end area.

A New Challenge Appears

Hi all,

We got the rest of the front nursery fence up. Gates will likely be gotten in a few months. I have to decide which one and get a mail/ package box to sit outside the fence since the gates will be locked. My Polar was low on power so I only wore it for like 20 minutes when it was probably a 50 minute job, but I will only report the hrm recordings for my exercise on myfitnesspal.

Now, onto the new challenge. Healthy Wage occasionally puts forth a free challenge. This is the 4th of July one, starting tomorrow. It is only going 40 days and to win a share of the $4,000 prize I have to lose 4% in that time frame. Now, at first, I was like that doesn’t seem doable, but during the 3 month team challenge, I have lost 5% in 45 days. So, it’s definitely achievable for me.

So, tomorrow I’ll be having my guy record a verified weigh in to start this new challenge.

Well, I am so grateful and happy with how my journey is going. Thank you all for following and liking my blog. There will be a contest soon. I’m getting close to 100 followers and that will be when I launch the contest. I haven’t decided what to give away yet, but it will be around $100 for sure.

What I’m Up To.

Hi all,

Hope you enjoyed the recipe yesterday. I plan on cooking more often and therefore can be sharing recipes more as well. I know that page is pretty sparse.

Oh, I also noticed there’s a free jackpot mini challenge on Healthy Wage for 4th of July. I signed up. To win a share of $4,000, I have to lose 4% or more in 6 weeks. Well, that may be rough but I’ve lost 5% in 6 weeks so far on the team challenge. So, we shall see.

Anywho, like I’m not doing enough already ( working, exercising, cooking, pet care, inventing, blogging, writing, gardening) we are undergoing projects outside. The current one is a fence that will serve as the “nursery” for my dairy sheep. I plan to get lambs in the early spring.

We have all the posts up for that area and the wire is half done. That is what has been my exercise the last two days. We will be finishing stretching the wire either Saturday or Sunday. Here is what it looks like so far.

Yes, that is the front yard. It’s a long story, but there is a good reason my front yard will have sheep in it, trust me. After the rest of the wire is stretched, then we will work on gates. We still have time so it’s all good.

Kimmie’s Pizza dough recipe

Hi all,

I promised yesterday to share the recipe today so here it comes.

For one large thick crust pizza:

  • 2.5 cups white or wheat flour
  • 8 tsp white sugar or splenda, or 4 tsp dried stevia powder
  • 1 Tbsp dry active yeast
  • 3 Tbsp extra virgin olive oil ( or a similar oil)
  • 1 – 1 1/2 cups warm water.

Now, I do this all in a stand mixer. It makes it very easy. You could do this with a hand mixer or by hand but it will be a lot more work.

I pour in the flour first. Next is the sugar and yeast. Then I give it a quick mixing, usually less than 5 turns on the mixer. I do this to more evenly spread the sugar and yeast. I then pour in the oil and start the mixer on low. Once it has been mixing a minute or so I slowly pour in the warm water. I start with a cup. For some reason ( humidity maybe) it sometimes needs a bit more water. I add it slowly, shaking the bowl a bit to make sure all is grabbed by the dough hook and incorporated into the ball of dough.

The finished product of raw dough should be mildly sticky, but a dusting of flour will allow you to easily get it all from the bowl and form a ball.

Place this on a floured large cutting board or similar surface, cover with a damp dark cloth and allow to rise 1-3 hours depending on the temperature in the area. It should double or more in size.

We cook our pizza on a Pizzazz oven. On it we cook 10 minutes lower and then 11-12 minutes on dual. This usually makes it thick, soft and just a touch crisp. It may have to be pushed down a bit if it rises beyond the cook area according to my guy.

For the pizza I have saved to my recipes on myfitnesspal.com I put the tomato sauce ( 2-3 Tbsp) 15 pieces of pepperoni and one cup of mozzarella shredded cheese.

This pizza is cut into 8 pieces.

Wonder Wednesday

Hi all,

So today we had the goal of starting the front fence. That hauling and walking and general helping with driving posts counts as my exercise for today. We drove all the posts. It took 52 minutes and I burned 669 calories.

Then I decided to weigh in. I’m happy to report that fully clothed I still weighed in at 314lbs. That’s down another 2lbs! ( more actually. )

That means I’ve lost 22lbs in 50 days!
